The Millers Story A Tasty Treat It's a simple thing to make some of the tastiest jams in the whole wide world. But then, the Miller family are simple people with an extraordinary gift of knowing what it takes to please ‘the discerning taste buds of those who love, to spread a fruitful sweet on toast or warm, fresh baked bread. The Amish couple and their children have fashioned a rapidly growing fruit jam making business in a small, northeastern Ohio town. Nearly six years ago, the Millers found their 89 acre farm was not big enough to provide income sufficient to raise a growing family. Another member of their community wanted to sell her small, jam making business and this industries family thought that it would be a perfect way to supplement their income. The, farmer and his wife use an old fashioned process to make their jams from strawberries, blackberries, cherries, strawberries and rhubarb, blueberries, red raspberries and boysenberries. They also make apple butter from the fall harvest and are planning to add grape jelly to their stock this summer.’ The ‘Millers use the same jam making process the Amish community has used for generations But, instead of picking the fruit off nearby trees and bushes they buy a high quality produce in Southern Michigan from a cooperative of family farmers. Fresh frozen when picked, the fruit is stored in commercial freezers in a nearby town until the Millers are ready to make the jams. The fruit. Is first thawed slowly, over three days. The jam making process, which has been inspect and approved by the state from beginning to end, takes about 30 minutes from beginning to end with the Millers working as a teem. After the fruit is fully thawed, fruit pectin is added to aid in jelling the fruit and the mixture is poured into a kettle where a measure of sugar is’ added. No water is added to thin the mix because it would reduce the quality and flavor. The fruit mix is hand stirred while being quickly heated to boiling in stainless steel container on gas fired burners and finally being cooked for two minutes before it is canned. The hot mixture is• poured immediately into sterilized 1/2 pint and pint jars and processed for 10 minutes in a boiling water bath to insure all bacteria has been eradicated. Because the cooking and canning are done so quickly and the batches kept small, the jams retain the full rich flavor of the fruit. The resulting thick, fruity, spread smells’ and tastes very much like the fruit from which it is made from. The Miller’s production process is not fast paced nor technologically driven. Their picturesque Western—Reserve style farm is powered by their energy and expertise rather than electrical and mechanical machines.
